Chicken Lollipop

Filipino Style Recipe: chicken lollipop is considered as appetizer and one of kids favorite. Usually have a spicy and delicious taste then served with favorite dip. This dish is made of marinating the chicken wings in spicy batter then coated with bread crumbs and then deep fried in hot oil until golden brown and crisp.


Estimated time of preparation: 20 minutes(plus marinating time)
Estimated time of cooking: 15-20 minutes.


Ingredients:
10 pieces chicken wings
1/4 cup flour
2 eggs, beaten
1/2 cup bread crumbs
salt and pepper to taste
cooking oil for frying
1 teaspoon cayenne pepper(optional)


Procedures:
Part 1
1. Using a sharp knife, cut the chicken wings through the soft joints.
2. Carefully sliding a sharp knife around the tip of the bone.
3. Separate the meat from the bone and gently push down the meat until a lollipop shape is formed.
4. Repeat the procedures for remaining pieces.


Part 2
1. In a bowl, combine chicken, cayenne, salt and pepper then marinate for 15 minutes.
2. Add beaten eggs and flour. Mix well until well coated then roll in bread crumbs.


Part 3
1. In a frying pan, heat oil over a medium heat.
2. Deep fry then chicken for about 10 minutes or until colors turn to golden brown and tender.
3. Drain on paper towels and transfer to serving plate. Serve chicken lollipop with your favorite dip.



Chicken Lollipop

Chicken, Ham and Cheese Roll

Filipino Style Recipe: chicken, ham and cheese roll is another special meat roll dish that usually served during Holidays or any special occasion. Normally the meat rolls stuffed with ham and cheese then wrap in spring roll wrapper. Coated in breadcrumbs then deep fried until golden brown.


Estimated time of preparation: 20 minutes
Estimated time of cooking: 10-20 minutes


Ingredients:
10 pieces chicken fillet
10 slices cheddar cheese(optional)
10 slices sweet ham, sliced halves
2 eggs, beaten
1/2 cup all-purpose flour
10 pieces spring roll wrappers(lumpia wrapper)
salt and pepper to taste
1 cup evaporated milk(optional)
1 cup bread crumbs(optional)
canola oil for frying


Procedures:
Part 1
1. In a bowl, combine beaten eggs and milk. Mix well.


Part 2
1. Pound the meat using meat pounder, season with salt and pepper.
2. Arrange ham and cheese strips over the meat and roll the meat.
3. Dip meat in egg mixture then dredge in flour and then dip again in egg mixture.
4. Brush the spring roll wrapper with egg mixture then place chicken roll on top.
5. Wrap and roll the wrapper then seal the edges with a bit of water.
6. Dip again each roll in egg mixture then roll in bread crumbs. Set aside.
7. Repeat the procedures for remaining pieces.


Part 3
1. In a pan, heat oil then fry each roll for 3 minutes or until golden brown.
2. Drain on paper towel then serve with dip.



Chicken, Ham and Cheese Roll

Chicken Binakol

Filipino Style Recipe:Chicken binakol or binakol na manok is another chicken soup popular in Visayas Region specially in Iloilo. This is similar to tinolang manok, instead of regular water we used coconut water and coconut meat. This simple Filipino dish is traditionally cooked inside the bamboo and they used native chicken to give more aroma and taste.


Estimated time of preparation and cooking: 45 minutes. Good for 4-6 persons.


Ingredients:
1 kilo chicken, cut into serving pieces
2 pieces green papaya or chayote(sayote), cut into serving pieces
1 cup chili leaves or malunggay leaves
1 thumb-sized ginger, cut into strips
4 cloves garlic, crushed
1 onion, chopped
2 tablespoon fish sauce(patis)
6 cups coconut water
1 cup coconut meat
4 tablespoon vegetable oil
salt and pepper to taste


Procedures:
1. In a sauce pan, heat oil then saute ginger, garlic, onion and lemongrass.
2. Add chicken and continue sauteing until light brown then season with fish sauce.
3. Pour coconut water, coconut meat then simmer for 30 minutes or until chicken is tender. Add water if necessary.
4. Add in papaya then simmer for another 5 minutes or vegetables are tender but not overcooked.
5. Season with salt and pepper according to taste.
6. Add chili leaves then turn off the heat. Let stand for a few minutes to cook the leaves.
7. Transfer to a serving dish and serve. Enjoy!
